Chopping the roof of a `57 Chevy

In 1963 AMT came out with the 1957 Chevrolet Advanced Customizing Kit. This kit was ahead of its time. One feature was the chopped top. It came with a chopped top window unit, and score lines in the roof and front and real pillars showing you where to cut and how much. Then attach the window unit into the body, and glue the quartered roof onto the window unit, do the body work and paint.  I have two window units and three bodies. And after 54 years, I want to do a full custom with a chopped top and full custom extensions.  Has anyone been down this road and have any insite to share. Body work is nothing new, having the window unit included in the process seems like inviting disaster and mayhem from the TV commercial.
